What is "honey processing"?
Conventionally, coffee is picked, removed from its fruit and then dried in the sun. If you leave some of the fruit on the 'beans' when you sun-dry it, that fruit 'melts' over the coffee locking in its flavor and adding a touch of sweetness.
The effect is impressive and tasty. That's why these coffees are rated so highly.
It had never been done in Nicaragua when we started. That was the birth of the Honey-Bear Reserve.

Hand Made
Every bag of HONEYBEAR by Twin Engine is hand-stamped. This is one of our Reserve coffees and is very special. So we give it the care and attention that it deserves.
Each bag looks slightly different because hand stamping yields different impressions every time.
Since the coffee is roasted in small batches to ensure quality and to maintain the craft, we thought that maybe we could do the same thing with the bags. The work is hard but it has created work for several people in our community here in Nicaragua.
